A few weeks ago, we took over the newly built Stowaway, an intimate room tucked within El Dorado, for a Tiki Pop Up! The night featured a three drink tiki cocktail menu and offered a mix of updated classic and original drinks.


We started guests with a Kona Swizzle. (white rum, fresh lime juice, house made coffee liqueur & orgeat).  It's one of my go-to swizzles and I'm sharing the recipe below! 


  • 3/4 oz lime juice
  • 1/2 oz orgeat
  • 1/2 oz coffee liqueur
  • 2 oz white rum

Combine ingredients in a shaking tin. Dry shake (without ice) and transfer into a chilled highball glass. Add crushed ice, swizzle, and mound with more ice. Garnish generously.  


The second cocktail on the menu was Dan's Special Daiquiri. (jamaican rum, passion fruit, yuzu, peach liqueur). The drink is slight variation of the Don the Beachcomber classic 'Don's Special Daiquiri' which in itself is essentially a passion fruit daiquiri and happens to be one of my favorite tiki classics.


We finished the flight with an updated version of the classic Painkiller (virgin islands rum, coconut cream, pineapple & orange juice). By scaling back on the original measures of fruit juice, we were able to better highlight the rum and offer a well-balanced version of the drink.
